I just want to know, when a wizard learn a new spell because of a level up, and choose "protection from..." does he know all of the protection from that is to say evil, chaos and so on or he has to choose which one he knows and if he win a anothoer level, he will be able to choose another "protection from"?

I'm pretty sure that each derivation of the protection from "blank" spells is a seperate spell in its own right; each one has its own spell entry, and the protection from good and protection from law versions aren't usable by paladins. These lead me to believe that they are different spells. Hope this helps! :)

Stabatha, yes, evil characters can benefit from the pro evil spell.
Ex.
A sorcerer with the infernal bloodline gets protection from good as an automatic spell, regardless of his alignment.
This is a useless spell, most of the time, in a party of good characters against evil foes.
EXCEPT - when one of the party members gets confused and starts attacking the other members.
This happened in one game, and the sorcerer was able to give the pro good spell to a party member for a +2 deflection bonus to AC against the confused, good PC.

I have a dumb question, if a character is evil , do they still benefit from a protection from evil spell? I assume they do but i am still getting used to the pathfinder system and haven't digested all the nuances yet.
Yes; an evil character can benefit from protection from evil. Hope this helps!

Each protection spell is a separate spell, a Wizard must learn it.
Disagree:
The wizard entry says to choose from the list not the descriptions -- the list includes it as one spell.
Also every other spell like it (such as resist energy) gives you the choice of which type it is when casting (also like summon monster).
As such I see it as a choice made when the spell is cast, while the description section is an anachronism held over from 3.0.

Except that summon spells and resist energy from explicitly say that you choose the effect of the spell, while protection from (alignment) doesn't.
One can argue that it should have been more liberal, but RAW says what it says.
RAW says it's one spell according to the spell list which is the only point that you choose your spells from.

Protection from Good
Protection from Law
These do not have separate spell statistics:
Protection from Energy
Resist Energy
There is no Protection from Alignment spell. Therefore the spells are separate.
