Pathfinder is what it is. Now there is nothing that keeps you from dipping into Prestige Classes at all. You said in 3.5 it was rewarding to do so and you wished there were some classes like Prestige Classes you could dip into for 3-5 levels. Ummm well those are STILL called Prestige Classes and you can still dip to your heart's delight.
It sounds to me though, that you are playing the wrong system. You want something like GURPS where your character is customized 100%. The d20 system uses classes which predefine a LOT of your options. It forces you to fit your concept to their classes. GURPS on the other hand is designed to fit the system around your concept.
I'm NOT saying it is wrong of you to want more customization at all. I think GURPS is the best mechanics in the industry. What I'm saying is I think you might be happier with that system than d20. I think it might be a better fit for you is all.
Heck I've been trying to figure out a way to retool d20 to be customizable like GURPS. No sucess yet, darn it.
Seriously, check out GURPS and see if you like it better.

I understand the point of classes forcing character concepts and abilities. It isn't as bad as it looks though at times, I wish there were more alternative class features available. Then again, I whine with a mouthful, with all the 3.5 bonus books, there is a world of possibilities, considering an open-minded DM.
The fighter for example is the easiest character to customize in his cathegory; he has a big lot of bonus feats to widen his combat tactics and might fit any fighting style at relatively low levels, be it a samurai, a Drizzt Do'Urden, a moving wall of armor, heavy archer, and so on.
The barbarian and rogue have a big list of abilities to pick from rage powers and rogue talents. Some class do not have that many choices unfortunately, and I guess this is what our friend here is pointing at. I like the fact that like the ranger with his Archery/Two-Weapon branch, the paladin got granted, from 3.5 to 3.P, an alternate possibility to his mount.
If there were new rules and powers to customize a class with, it would fit a larger portion of character concepts, which could be nice and stimulating. I'll look up something.
PS : Evil Dead for the win even though it's old stuff. Basically, some people in real life would have higher WIS scores if they lived in prehistorical times. (No puns intended by the way.)

All classes need more cowbell. You can never have enough cowbell. Fighters and Mages both suck since they severely lack cowbell, but the Bard is alright because he has more cowbell.

The druid is okay too, if you name her bell. From 4th level onwards, you could easily turn into a cow, so I think that's okay.

No, but they can become the cow Bell. If their name is Bell. can you shapechange your name?

If they are high enough level to have shapechange, they can.

The same could be said about the introduction of the grid map, mini's, or 3E's rules requiring a square grid map. I am not saying that 4E is good, I hate it. What I am saying is that everything since 1st Ed has made D&D a little more strategy and a little less RP, (by the book anyways), so you can't lay that blame soley, or even mostly on 4E. 3E, and therefore PF and 3.5 had some to contribute, as did, probably least of all 2E.
Not to mention that it seems Knowledge Arcana can do anything. .

Two things:
1) Lay off the random '4e sucks'/'No it isn't' (or vice verse) in threads to which it really isn't relevant.
2) If someone does the above, the correct response is to use the flagging system and move on. Trying to get the last word on an internet argument a Sisyphian task. It's a lot easier to clean up random acts of trolling if it doesn't have half a thread worth of replies.
