I'm not sure how the "back issue" works, if you subscribe you get the previous issue as well. I think if you subscribe right after Kingmaker comes out, that would be the best time. Of course, I'd wait for an official answer on that one.
To answer the other question, no. You can simply post in the Customer Service forum to cancel your subscription after the last book has shipped. Or possibly contact them as well.

When you go to sign up for the AP's it will give you a start option. Right now you can start with 28 or 29, just click the one you want to start with. So, when 30 comes out it should also have 31 as an option to start the subscription.

This... the day that 30 starts shipping, 31 should be an option.
As for your second question the only way to currently cancel a subscription is either emailing, the messageboards, or calling customer service.... You COULD set up a email to them and set it to mail at a future time (depending on what you're using for email, depends on if/how this is set up), and set it to mail out at the end of July..

After clicking the button to add the Adventure Path subscription, view your cart and you will see the option to pick which issue of the Adventure Path to start on. You can either choose the current issue or the upcoming issue. Once we've started shipping issue #30 the options will be to start with either #30 or #31. The first Kingmaker AP is issue #31, so you would want to choose that option. The option for starting with #31 will probably show up mid to late February.
For canceling the subscription, contact us by messageboard, email customer.service@paizo.com, or by phone, after the last issue you would like to receive has shipped from our warehouse (and you have access to the PDF).
