Pathfinder already said this in their FAQ:
I am a publisher. Can I produce products that support the Pathfinder RPG?
The Pathfinder RPG is designed according to the 3.5 OGL, and all game rules that do not involve Paizo's intellectual property (such as our deities) will be 100% open and available for use by other publishers according to the terms of the Open Game License.
So they do want other publishers to join in. But I think that some people find understanding PI/OGC definitions, and the process of PI extraction, a bit confusing. Professional publishers have got legal people who can help them with this, but amatures don't. In any case a "3.75 SRD" would avoid duplication of effort by different publishers and make it a lot easier for amatures to produce 3.75 compatible OGC that doesn't cause problems for anyone re-using it.
You could, as you suggested, create a wiki for this. Wikia is just one company that gives free webspace for wikis. There is also a non-profit website called System Reference Documents run by someone called "The Raven". It might be possible to get hosting or other help from The Raven. (If he/she is too busy to help maybe you could still get a link to the 3.75 SRD wiki, from the System Reference Documents website.)
As someone who wants to stay with 3rd edition rules, I would love to see other publishers stick with 3.5 or go with Pathfinder's improvements. But the d20 Publishers can only really hang around for so long before they are forced to adopt 4th edition rules or switch to their own system. I think that Paizo could make it a lot easier to get other publishers onboard if they gave official support to creation of a new SRD. So I publically call Paizo to give some sort of support for this process.
What do you say Paizo? Will you give hosting or some other sort of assistance for a 3.75 SRD based on the Alpha, Beta and then final release of your rules?

In this thread there was somebody asking about using PF RPG content in a Wiki page. It seems that it is a difficult issue to decide what parts is OGC o what aren't in Alpha Document. I think we should wait before making such a move. Perhaps somebody in Paizo can tell us more?
