Anybody got any guesses as to why gouging claw was left as d6+stat and not errataed to multiple d6 like the other cantrips when Remaster happened?

It wasn't. The damage is 2d6 in Player Core 1.

Gouging claw was updated. From PC1:

"You temporarily morph your limb into a clawed appendage. Make a melee spell attack roll against your target’s AC. If you hit, you deal your choice of 2d6 slashing damage or 2d6 piercing damage, plus 2 persistent bleed damage. On a critical success, you deal double damage and double bleed damage."

Hammer, you scooped me! ;)

Or another way to look at it: Gouging Claw didn't get an entry in the Secrets of Magic Remaster Compatibility errata because the updated spell was moved into Player Core.

Ah, that'll teach me to rely solely on AoN. Thank you.

Archives of Nethys hasn't added any of the new content or errata yet, actually.
