Impossible Magic turned summoner into a two-slot caster. As such, Unlimited Signature Spells was replaced with Signature Spells.
You have learned to cast some spells more flexibly. For each spell rank you can cast, choose one spell of that rank to be a signature spell. You don't need to learn heightened versions of signature spells separately; instead, you can heighten these spells freely. If you've learned a signature spell at a higher rank than its minimum, you can also cast all its lower-rank versions without learning those separately. If you swap out a signature spell, you can choose a replacement signature spell of the same spell rank at which you learned the previous spell. You can also retrain specifically to change a signature spell to a different spell of that rank without swapping any spells; this takes as much time as retraining a spell normally does.
That's all well and good for a caster with more slots, but at 3rd level and every odd level thereafter, you are only getting one spell of your new rank, which would mean that there's only one option for that signature spell.
Are the signature spells just chosen at some other time?

I read it as you pick immediately upon gaining a new spell rank, and can swap out sig spells just like other spontaneous casters. Like Frank, I would probably pick the spell I want as my sig spell first each rank, and swap out spells that become obsolete. SP, can you give an example of this being flawed?

I can. That means that you have an entire character level where you may have a second choice spell as your only spell of that Rank.
Sure, you might want that second choice spell as Signature, but you want your first choice spell available as soon as possible - even if it is one of the evergreen spells that doesn't need Heightening.
But I'm pretty sure that this is a moot non-problem.
Each time you gain a level and learn new spells, you can swap out one of your old spells for a different spell of the same rank.
There is no requirement that the swapping has to have any net effect on which spells are in repertoire. You can swap out your first choice spell and then immediately add it back in during the same level-up.
Which effectively means that you can put in your first choice spell first and set it as your signature spell, then when you level up and gain your second repertoire slot you can use the repertoire swap ability to switch the signature spell designation to your second choice spell that you want to be signature permanently.

Couldn't it still be an issue if you wanted to swap out a different spell at that even level? Like, maybe I want to replace R1 fear with R1 lose the path, but I've already chosen R2 loose time's arrow as my signature spell (because I wanted R2 loose time's arrow as soon as possible, making it the only spell that could become a signature spell when I gained that rank), so now my one spell swap per level has to be spent replacing R2 loose time's arrow with the R2 signature spell I actually want just so I can immediately regain R2 loose time's arrow as a non-signature spell.

You suggest adding as signature a spell which you don't know at all? And then learn it later? Or what do you mean?

Isn't Retraining a more direct solution ?
It is the solution of last resort. It will always work, but it costs Downtime - and not all campaigns or APs have ready access to Downtime.
It is completely appropriate for the GM to require Retraining for players who are electing to change things up mid-level.
It is much less appropriate for GMs to require players to spend a week of downtime to Retrain when, because of edge cases in the game rules, they have no other option to get their character into the state that they want it to be in from the very beginning.

Correct. Signature Spell just says "one spell of that rank" ... so you pick any spell.
Then at a later level when you have more room in your repertoire you learn the spell so you can y'know, use it and do all your stuff. No hot swapping required.
That's more rules-lawyery, elegant, crazy and funny than mine crude solution, I like it.
I also agree that casters should not be forced to choose too early when it's not that important.
