I have read many guides and looked at some thread suggestions but I couldn't find anything that fit what I wanted to do.
I wanted to build a melee character that utilizes the polymorph spells to become whatever the situation calls for.
My initial idea is Paladin 2; Shapechancer bloodline Sorcerer 8; eldritch knight 10 with the prestigious spellcaster feats to get to lvl 9 spells but I feel like it is lack luster.
Any suggestions? What I would like with this concept is theoretical access to the sorc/wis polymorph spells of all spell levels, melee capabilities, no prepared caster (I have alread played 2 wizards and 3 clerics and have realized that I am not a fan of playing prepared caster). Or is this just not doable outside of gestalt? I don't care for it to be strong, it just needs to be capable of contributing to the party as a melee fighter

I'm assuming the Wildshape feature from the Druid and Shifter classes isn't fitting your vision???
You are stepping into a bit of a minefield here: The Wildshaping Druid was the poster child for power issues in D&D3.0 as they were powerful melee combatants with full spellcasting as well, which made players wonder why they should bother playing a martial character at all. Polymorphs aren't as strong as they were back then, but they are still powerful and complicated so you're aren't likely to get anything 'more flexible' than Wildahape without a full caster build like the one you mention.

PF1 discouraged a strong/effective melee shapeshifter build in their designs. With lower expectations you'll be fine. I'm separating changing form from just getting a natural attack(s).
Secondly, buffing natural attacks comes with double the price.
You have several ways to go about changing forms;
1) Special Class: these are classes that Wildshape(Druid etc) or have shapeshifting built in(Shifter etc).
2) Class: choose a close combat/hand to hand melee fighter class (unch Monk, Monk, Brawler etc) and get shapeshifting/polymorph via something else. Then you have to multiclass into wizard/sorcerer/Arcanist-BrwnFur Trans etc to get spells or abilities to change shape/form or spend cash for magic items or expendable items.
3) Race: some races have multiforms like Kitsune, Skinwalker(GM approval). Then there's monster races which require GM approval.
4) Afflictions: lycanthropy etc. This requires GM approval but IMO the best way to get a melee natural attacker. You can always use spells to vary your form.
That is different than just getting some type of natural attack like claws. This is what the Sorcerer draconic bloodline does along with other things.
Kinda #2 is what you've done with Pal 2 Sor(shpchgr) 8 EldKngt 10 via hardened fists and slightly boosted self-polymorphs.
Honestly Wizard specialist is my favorite class and usually going with a multilclass and maybe retraining it out past 14th Lvl if it's not working. So I'm thinking you just want something simple. GM style & Campaign does affect what you choose.

If you're looking for most powerful melee build, I agree with Taja above: you can't go wrong with wildshaping druid. Get up to wildshape and then throw some barbarian levels on top for flavor. I played a Druid (bear shaman) 6/ Barbarian 10 for Kingmaker and it was a blast.
But it sounds like you want the flexibility of lots of shapechanges for whatever the situation calls for. As a druid, you'll only get a few wildshapes at best, so you'll be limited to the number of changes/forms you can take. Your sorcerer/eldritch knight sounds like it would be a fun build. Can't say I've tried it personally, but I'd be very curious how it turns out.

for this version I am considering taking the prestigious Spellcaster feat 2 more times and to replace 1 sorcerer Level and 1 Eldritch knight Level with 2 Paladin Levels, I am also considering if grater Eldritch Heritage for Superior Transformation is worth it.

One suggestion: For a melee-focused arcane caster, taking four levels in dragon disciple before transitioning to eldritch knight can often make a lot of sense (+4 to Strength and extra natural armor). Losing an additional level of caster progression can be mitigated with the Favored Prestige Class and Prestigious Spellcaster feats.
Two other possible characters, with a wider selection of possible forms (by being able to learn all the polymorph spells, instead of a limited selection in spells known):
Ganzi (Weaponplay oddity [proficiency with all martial weapons without dipping in another class]) arcanist (brown fur or school savant [Transmutation/Shapechange] probably) 6/eldritch knight is probably the most straightforward option, only giving up one level of casting progression. Alternately, you can go skald (spell warrior for Enhance Weapons and take the Lingering Performance feat) 1/arcanist 3/dragon disciple (note the requirement is "without preparation," so arcanist doesn't qualify RAW) 4 (advance arcanist casting; which is allowed RAW)/eldritch knight with any race and take Favored Prestige Class/Prestigious Spellcaster to still gain 9th-level spells.
If you prefer a wizard, then skald (spell warrior) 1/wizard (bonded wizard with the Transmutation/Shapechange school; or exploiter wizard with the School Understanding [Transmutation/Shapechange] exploit) 2/dragon disciple 4 (advance wizard casting)/eldritch knight can qualify for eldritch knight one character level faster than skald/arcanist/dragon disciple. Still gains 9th-level spells at 20th character level without Favored Prestige Class/Prestigious Spellcaster.
