It says the spell's bonuses apply during that action, the action you can do WHILE casting the spell, because some might claim you can't benefit from the spell's bonuses until AFTER you cast it. It doesn't say the bonuses ONLY apply during that action, and the spell has a duration instead of being instantaneous, so yes I would allow it for other Athletics actions during that round

Yeah, you just cast the spell and it lasts for 1 round.
As a bonus, you get a Subordinate action as part of the spellcasting that you can use on Stride, Leap, Climb, or Swim. As normal for these types of Subordinate actions, you don't necessarily have to use them to any effect. The note about applying the bonus from the spell to that action is because of timing of effects - without that, it would be ambiguous if the spell's effect applied during the Subordinate action, before the spell finishes being cast.
And the spells effect lasts for at least the rest of your turn that round, and depending on GM, until the top of the next round or until right before the start of your next turn.
So for example, cast the spell for one action; use the bonus Subordinate action to Stride (or Leap, or Climb as needed) towards an enemy; then spend another action on Trip to attack them with. Both the Stride and the Trip would get the bonus from the spell. And you still have one action left for your turn.
