Given the origins of this spell, are you able to move just with you feet in contact with the incline or vertical surface or does there need to be 3 points of contact?

No. The Spell only gives you a Climb Speed.

Climb speed just removes the need to do Climb checks and the off-guard condition when climbing.

If you want a free-hand you still need to take the Combat Climber (what allows you to use at last one hand. Without it you can't use a hand at all).

If you want to have both hands, you still need a tail and a feat like Lizardfolk's Dangle feat.
