Confused about this Feat because the Table at the front of the Feats Chapter lists the prerequisite as Trained, while the Feat description has it as Expert.
It seems like Expert is the Likely answer, as almost all other Level 2 Skill feats require Expert as their prerequisite.
Any help would be appreciated, as Pathbuilder is defaulting to Trained.

I would go with what the feat itself says as AoN, Demiplane, Foundry and others already have.
I believe this explanation on feats also helps.

General feats also include a subcategory of skill feats, which expand on what you can accomplish via skills. These feats also have the skill trait. Most characters gain skill feats at 2nd level and every 2 levels thereafter. When you gain a skill feat, you must select a general feat with the skill trait; you can't select a general feat that lacks the skill trait. The level of a skill feat is typically the minimum level at which a character could meet its proficiency prerequisite.
level 2 is the earliest someone could get expert crafting. So the feat being a level 2 feat leads us to believe expert proficiency is the intention.
