Hello, I want to upgrade an ability from a creature.
If a creature has a CR 5 and I upgrade it to a CR 10, how upgrade its ability ?
For example, an ability with a DC 24 Fortitude for a CR 5, is it DC 29 for a CR 10 ?
And for the damage ?
For example :
Effect Each creature along the line between the kite and its ally takes 1d6 slashing damage (DC 16 basic Reflex save).

Yes, I would use the Building Creatures tables to update the numbers on special abilities too. Just like I would for the creature's HP, AC, skill bonuses, and other stats.
For example, an ability with a DC 24 Fortitude for a CR 5, is it DC 29 for a CR 10 ?
DC 24 for a level 5 creature is half way between the High DC 22 and the Extreme DC 26. So upgrading that to level 10 it would be DC 31 - half way between the High DC 29 and Extreme DC 33 for a level 10 creature.
Effect Each creature along the line between the kite and its ally takes 1d6 slashing damage (DC 16 basic Reflex save).
Damage would be handled similarly.
An Animated Kite is a level 0 creature and the ability has DC 16 (Exactly matches level 0 High DC) and does 1d6 damage (exactly matches level 0 area effect unlimited use).
So a level 6 Animated Kite's Sawing Line ability should have a DC of 24 and do 4d6 damage.
