Yeah... 'psionics' was never really a thing in any Paizo product outside of 3PP stuff. Some of the concepts got rolled into the occult classes of PF1e and then brought forward as the Psychic class and occult spell list in PF2e. Both Mystic and Witchwarper already have access to that spell list.
SF1e had several ways to pursue psychic powers via feats granting expanded abilities for telepathy and a suite of methods to gain relevant spells as spell-like abilities. I'd imagine we'll see something similar in SF2e.
'Psionics' just tends to have a very specific meaning in D&D derived TTRPGs. If you're asking for a PF2e version of Dreamscarred Press's PF1e version of D&D 3.5e's psychic warrior class, I don't think that's going to happen.

SF2 has Mystics who connect with the psychic archive of all knowledge in the universe and Witchwarpers who can alter reality with their minds. PF2 has Sorcerers with the blood of alien, Aberrant creatures and the literal Psychic class. Paizo's had a pretty clear approach to this stuff for ages now.
If you want psychic powers as a wholly separate subsystem from spellcasting, that's not gonna happen here, and has been largely left to rot in the 3.5e-era design of 20 years ago.
