I'm looking to make an encounter that has creatures emitting some kind of poison gas that goes through the air but it's hard for me to find just scrolling through creature lists in Foundry or on Nethys. I know I could just make a creature, but I'd like to avoid the work if there's one that fits the bill already.
I don't know of a better way to search so I hoped that someone might be familiar with creatures they know have some kind of poison gas ability and just point them out for me.
Looking for anything remotely similar to a dragon's poison Breath Weapon that isn't a dragon.

A Coven of Skull Fairies can cast Stinking Cloud, and when one of them dies they create a 5 foot emanation area effect that causes Sickened 2.
I think the biggest problem you are having with your search is that 'poison gas effect' is a bit too vague to do a text search for.
It may be easier to take an existing creature that fits your encounter for other reasons and then replace or add the poison breath weapon as a custom ability to it using the Building Creatures rules.

I originally tried looking for just "breath weapon" but it didn't lead me in any good search patterns. I am not aware of a tool that lets me see every creature that has one.
Approximately what level range were you thinking?
In the 3-6 range. It's not supposed to be a huge combat challenge so much as a skill challenge to avoid the poison and weaken the creature before combat begins so they start with overwhelming advantage.
I'll resort to grafting it on to another statblock if I have to, but since I also use Foundry and have the Token Bestiaries pack, I'd prefer to use a creature with it built in and scale down the level if it's too high so I can use their accurate art and tokens.

Neither am I. I started by searching for Stinking Cloud since I knew that was a spell that vaguely matched what you are looking for and found the Skull Fairy that way.

There was a lizard-cat hybrid thing that attacked us in the Gatewalkers AP with a gas cloud.
Found it, called a Desa-Desa, Creature 2
Looks like it was actually fire damage, did not realize that, but could be still used as a point of reference for any homebrewing.
It's also not a lingering cloud, not sure if that's the main thing you are going for.

Here's a great way to get more bang out of AoN, using the "types/categories: Creature" filter paired with and advanced search syntax
of: "line" || "cone"
So this returns anything that's labelled as a creature, and has either the exact word line or cone somewhere in there.
I found reference to AoN using "elasticsearch" query syntax, not used that myself, but that's in case you need to look it up. I don't think it's normal to need a double pipe || to get "or" in most advanced searches.
488 entries match, if you want to trim that down before you browse, this query will get you started.
