Suppose I got Swallowed Whole by a monster with a Burrow Speed, then the monster burrowed underground without leaving a tunnel, then I killed the monster from the inside. How do I get back to the surface without a Burrow Speed of my own and without suffocating to death?
By RAW, you just die. And if that is the GM's intent, I would suggest getting a different GM.
If that is not the GM's intent, then they would be the one better suited to answer the question.

You're going to need to work with your GM on this one via the whole case-by-case basis dealio.
If I had to make the call for this situation I'd probably offer something along the lines of you cutting into the creature's lungs which releases a small amount of breathable air (since most burrowing creatures have to hold their breath while burrowing anyhow) to give you a pocket to survive on while you work to improvise some tunneling efforts toward the surface but this situation is a really fraught one regardless since the process of burrowing doesn't leave an open tunnel behind the creature unless otherwise noted and only a handful of creatures even have that.

There are definitely ways to survive this. A 5th level dimension door would likely do the trick, but I suppose if that was available then you wouldn't have bothered killing the creature first. Items like an air bladder or bottled air, and spells like air bubble could also help out here by buying you some time. If you attuned it ahead of time, a cube of recall would also get you out of this situation.

Yeah, if your GM does this they're trying to kill your character while making avoiding making it seem like that's their intention.
Maybe it genuinely isn't their conscious intention.
But setting up such a scenario ultimately means they put your character in a situation where death was highly probable and even defeating the enemy couldn't guarantee you avoid it.
