If I were to play an 8th-level Kineticist with Kinetic Weapon, Ranger Dedication, Basic and Advanced Hunter's Trick, and Far Shot; would I be able to blast targets from up to 1,200 feet away (200 foot range increments).
Or does Far Shot not interact with kinetic weapons?

It doesn't interact, they aren't weapons. They are elemental blasts with their own rules that the weapon infusion feat just lets you add a trait to or change the damage type.
Well, it's a bit odd as it adds a range increment too as the base blast has a set range. The rub is that range increment and Range Penalty are listed under weapons [Range Penalty, Core Rulebook pg. 446, Ranged and thrown weapons each have a listed range increment; Range, Core Rulebook pg. 279, Ranged and thrown weapons have a range increment]. This means if we disallow Far Shot because it isn't a weapon, an argument can be made that it doesn't take the penalty at all because the penalty says "Attack rolls beyond a weapon’s range increment take a –2 penalty for each additional multiple of that increment between you and the target." I'm hoping the wording gets cleaned up in the remaster to replace weapon with attack so it covers unarmed attacks and blasts as it's clear the section was made with only weapons in mind.

not everything with a ranged increment is a weapon.
as an old example, there are ranged unarmed attacks which do come along with range increments, and those are definately not weapons.
Blasts are attacks, so they need stats to function like attacks, which does include range, but not every attack is made with a weapon.
