I don't know if I understand your question right but basically is possible to Earn Income with anything as long as it is a plausibly profitable work, that is in demand and makes sense in the place and for the people where it is being applied.
In some cases, the GM might let you use a different skill to Earn Income through specialized work. Usually, this is scholarly work, such as using Religion in a monastery to study old texts—but giving sermons at a church would still fall under Performance instead of Religion. You also might be able to use physical skills to make money, such as using Acrobatics to perform feats in a circus or Thievery to pick pockets. If you’re using a skill other than Crafting, Lore, or Performance, the DC tends to be significantly higher.
I even consider non-skill abilities like your unarmed/weapons proficiency and even magical proficiency as way to Earn Income. You can use your abilities as a martial professor or use your magical cantrips to Earn Income doing jobs that your magical abilities could allow like using Bullhorn to make money doing announces in a open market or Prestidigitation to entertain or do little artistic objects or to color and clean things.
Just remember that try to use a non-skill proficiency to Earn Income means that your proficiency is and progress probably worse than your skills and your GM may also consider to increase the DC if it judges that is needed.
I not even consider this as a homebrew because the Earn Income is in a full governance of the GM and adventure specific who will determine if you have enough downtime, if the place that you are offers a demand for your skills and if your idea of how do you will try to Earn Income makes sense for the GM.

Yup. What kind of skills can be used to earn income, what task level it can be done at, and the narrative of that task are all at GM discretion. So no one who isn't your GM can give you an answer of whether any of those ideas will work in your game, in the place where you currently are.

As a GM, allowing these is pretty safe too. Since everything involving level is on the same scale (now that spells use the word 'rank' instead) that means that they are equivalent enough to be used for Earn Income.
You could use a saving throw bonus to Earn Income and the math would work out fine. All you need is some actual in-game justification for why the NPCs of a settlement would pay for it.
