Nope. You need to make a "melee Strike".
I think the misunderstanding comes from the term "Unarmed Attack".

Yes, that's why I linked you the text about unarmed attacks. I think the misunderstanding come from here: An Unarmed attack is a type of "weapon", not an attack per se.

It says to make a melee Strike with a weapon or unarmed attack. Leshy seed pods are unarmed attacks, but aren't melee strikes. So Spellstrike doesn't work with those types of attacks.

Yes, "[make a melee Strike] WITH [a weapon or unarmed attack]", NOT "make [a melee strike with a weapon] OR [unarmed attack]"

"Unarmed Attack" is a defined phrase (CR 278) that's equivalent to "weapon" in its usage in this game. Some can be used to make melee strikes, and others are ranged. You need to make a melee strike unless you are Starlit Span hybrid study magus
