Core rulebook (4th printing):
Choose one weapon group. Your proficiency rank increases to master with the simple weapons, martial weapons, and unarmed attacks in that group, and to expert with the advanced weapons in that group. You gain access to the critical specialization effects of all weapons and unarmed attacks for which you have master proficiency.
Core rulebook errata:
Any class feature that improves the proficiency rank or grants the critical specialization effect access for simple weapons or a specific set of weapons, that ability also grants that benefit for unarmed attacks.

The different unarmed attacks can be in different or even no weapon groups. The fist is in the brawling group.
But typically other unarmed attacks like claws are not. That is right no weapon group.
The monk has to take a special feat to get critical specilisation, i.e. Brawling Focus. The fighter won't get it for all their unarmed attacks till they get to master proficiency ie level 13

The Fighter's Unarmed Attack Proficiency normally progresses along with their Simple Weapon Proficiency.
But some Unarmed Attacks are in weapon groups (mostly brawling but a few in knife), and those can advance faster if you choose those groups for Fighter Weapon Mastery and/or Weapon Legend.

yes, choosing the Brawling group at 5 & 13 will raise your proficiency with the weapons and unarmed attacks in that group, and grant the crit spec effects for those you have master prof with. As mentioned, some unarmed attacks are in other weapon groups, so double-check which group(s) your unarmed attack(s) of choice are in
