I am interested in playing (another) Windstep Master Unchained Monk. This archetype trades away Stunning Fist for Hurricane Punch.
What I want to know is, how many uses per day do I get if I select Stunning Fist as a feat after I have a BAB of +8?

You have traded away the bonus feat, so you don't get the special. You get the normal effect, i.e. 1 attempt/day every 4 levels.
The feat description was written before the existence of archetypes, so it doesn't consider the ability to trade it away.
The alternate option is that the special applies as you are a monk, but then all of it applies, and you have already received the feat and can't take it again.

You get one use per level per day, because the respective sentence in the special section has absolutely nothing to do with getting the feat as a bonus feat. You can see a similar but even cleared case in the special seciton of Elemental Fist, where the special section text is almost identical to Stunnign Fist, except that the first sentence is explicitly only for a specific archetype. The second sentence using "monk" instead of the archetype name shows that it's seperate.
The first sentence in Stunnign Fist's special section is reminder text, it is not rule text and thus it doesn't do anything. You can see that it's reminder text because at the time the book was released, removing that text would have changed not a single part of the rules.
If it wasn't reminder text, you'd get the feat even if you trade away the class feature, because the feat says so. Of course, literally no GM will let that fly, because that's obviously not as intended.
