I just want to make sure. Even though Mithral makes Mithral Breastplate Light, it still count as Medium armour? So the Mental Focus Enchantment would still work?
Mithral does NOT change the armor category in pathfinder. It is treated as 1 category lighter for the purpose of movement speed only. For everything else it is still medium.
So yes, mental focus can be applied to a mithral breastplate. At the same time it cannot be applied to a mithral full plate.

That's not entirely true. It doesn't change the armor's actual category, but mithral armor counts as one category lighter for a lot of things. Basically everything except proficiency and determining what enhancements can be put on it. There's an entire FAQ entry dedicated to the question.
Mithral is treated as a category lighter (minimum light) for all class features. Proficiency and anything specifically determined for the armor (like armor abilities) and not someone wearing the armor treat it as the unaltered armor category.
