With Modular Dynamo, the character also gains an unarmed attack that has the grapple trait, meaning any item bonuses that she gains from her handwraps also add to her Grapple attempts with the weapon, is it right ?

To Escape, this is typically the Athletics DC of a creature grabbing you.

Do the item bonuses that the character gains from handwraps add to calcultate Athletics DC ?

Any specific bonus for a maneuver doesn't add to your athletics DC.

It adds to the attack (Grapple) but not to the target DC to Escape.
