Oozes are generally mindless. I do believe there are some that are not, but most are. With the Hag Eye Brew you create a Hag Eye ooze that is "loyal" to you.
I can easily see that if people don't see the ooze and they stumble into the center of it or part of it, the ooze will be digesting them, but since its loyal to me, could a mindless ooze choose not to harm me? I am unaware of literature on oozes. Is every ounce of their being made of digestive material, or just the insides? For example, in the case of the hag's eye ooze, could I make the mindless ooze a pet and hold it in my lap without being paralyzed?
To what degree could I even control it to call it loyal? It's not like I could say, "now don't eat my party members", right? They are not particularly wise either. So what's the point of this ritual? To just throw it in a dungeon and use it as a security device like how the hags use it?

in the creature's information it say it usually avoid combat (unless stepped onto or ordered) and also mindlessly follow orders. id say as long as you don't tell it to attack your party members and they don't walk into it they should be safe.
as the paralyzing effect is only mentioned for it's slam attack or creatures walking into it, i'd say mere touching it won't be enough to paralyze the controller. though holding it in your hands might get them numb ;)
as for to what degree it follow orders i would say that since it's int is 0 the magic that bind it kinda direct it (like how mindless golems obey their master) they would follow orders to the letter.
aka 'when I asked for a cup of water, i didn't mean the cup should be made out of water!..."

Hag eye oozes seem to be imbued with a sliver of the cautious side of their creator's personality, watching intruders from a distance and avoiding combat unless directed to attack. Once given a command, these creatures pursue their goal mindlessly until a countermand is given.

Looks like hag eye oozes essentially function as constructs. (Which also have no intelligence score.) Even thought they have the ooze type instead of the construct type, they should still follow the orders of their creators as a construct would.

That's a good point. I couldn't recall a creature that was mindless that worked well for a caster, but right, golems. Ooze Pet here we come!

Most oozes are also in lore constructs. Even the king of all oozes, an immortal ichor is literally just god essence that someone stole away into a slime blob that can fly.
