My thoughts are currently
Cleric (white mage) with the animal domain to get a Sniper cactus (cactuar).
A Cavalier with an Axebeak (or hunter if gm is a stickler) as axebeaks are damn near chocobos thus being a chocobo knight
Monk >obvious
Wizard (blaster styled to be a black mage)
Ninja to function as trap finder/rogue
Summoner or arcanist (occultist) to summon.
Is this party well rounded enough? Can you think of anything to add or remove or replace?

Replace the Summoner with a Elemental Ally Druid and flavor each of the Eidolons after Valefor (Air), Ifirit (Fire), Shive (Ice), and *insert choice* (Earth).
Maybe use an Arcanist to replace the wizard as the blaster. Or just a sorcerer. Mages in FF don't tend to know a lot of spells, and if it is more themed for the games that use assigning skills/crystals/materia/etc, the Arcanist's daily spell swapping might be more appropriate.
As for being well rounded... You have six characters. You should be fine.

You need a Swashbuckler1/EldritchScionMagusX for a Red Mage, with Weapon Focus: Rapier.
You could probably use Druid as a Blue Mage, except you'd probably have to re-skin Enemy Skill into Wild Shape somehow.
I'd go Cleric/Sorcerer/MysticTheurge for a White Mage, and devote Sorc spells known to buffing.
Crossblooded Orc/Draconic Sorc1/BloodArcanist1/AdmixtureWizardX for a Black Mage.
For a Dragoon, I'd go Cavalier permanently enchanted with a Fly spell, except give him a Dragoon's Cape for "High Jump" teleport 120ft above the target and "Flying Charge" straight down.
Monk, Thief, Ninja, Samurai, and Warrior are easy.
DeathlessOne was spot on with Elemental Ally Druid for Summoner.
If you want to create Squall, that's a Gunslinger1/FighterX with Exotic Weapon proficiency in Gunblade. Cloud would be a Titan Fighter.
