If I have a unique companion that dies, am I able to pay for a resurrection ritual to revive it? my assumption is yes
I also assume that i cant just replace it like for like as it is a unique companion from a boon
experiments. If you have an animal companion, you can check the box that precedes this boon between
adventures to replace it with the fiery leopard (Pathfinder Adventures: The Fall of Plaguestone 57). You
may also transfer this boon to one of your other characters who has an animal companion, immediately
checking the box on this boon and replacing that character’s existing companion with the fiery leopard;
keep a copy of this Chronicle with that character
Thanks!

From my understanding, once you lose it....that's it. It is gone. Of course with how fragile animal companions are in 2e unless you put them in plate barding and make them Mature or above Companions, it is better to just keep your companions with "the supply train" or might as well leave them behind.

They're not THAT fragile unless a GM is being very, very unkind and saying that they automatically die at 0 HP. They do go down a fair bit but as long as the group helps they generally get back up again just like a PC. They're obviously generally lower priority on the heal list so of an encounter is VERY tough they ARE at greater danger.
But I think I've only seen one permadead animal companion (and that was in Abomination Vaults which is insanely difficult in book 1)

They are not that vulnerable, especially if the party has some healing spells, but alas, it seems likely that if the unique companion dies, you need to consider getting it resurrected.
But would it be possible to resurrect a unique companion like the Fiery Leopard as it takes a specific boon to get it in the first place?
