Doctrine is a definite yes.

CRB page 481 wrote:

Deity is more of an "ask your GM" question, but probably yes, especially considering the Aroden => Iomedae switch.

Edit: Deity seems to be a class choice too, so even more on the yes side.

Gods and Magic, Changing Faith says yes, but it takes at least a month of downtime, and that's switching between two closely related deities.

So that would be at least two months of downtime for the pair, it sounds like.
