What kind of information would this give against a monster if you used Recall Knowledge? It doesn't specifically say like some other abilities do. Is there a range limit on recall knowledge at all, if an enemy is 200ft away would it still be without penalty?

Cast Reaction verbal; Trigger You attempt a Perception check to Seek, or you attempt a skill check to Recall Knowledge with a skill you're trained in.
Speaking a short prayer as you gather your thoughts, you're blessed to find that your deity gave you just the right bit of information for your situation. Roll the triggering check twice and use the better result.

What Nefreet said, but also any Recall Knowledge check ought to suffer from being 200' from the subject. Damned if I know how big the penalty should be, though.
I mean, only if you can't see them clearly. Distance is not an issue unless you can't see what the creature in question is. A roc or T-Rex is still gonna be easily identifiable at that distance on a clear day, for example.
But not being able to clearly see or otherwise perceive the thing you're attempting to Recall Knowledge on should definitely be in the +2 to +5 DC range, depending on circumstances, unless you have some Feat that specifies otherwise.
An exception to that should be made for Invisible Stalkers and similar naturally invisible things. Their invisibility is well known, and thus wouldn't make it harder to recognize them than usual from the other signs.

Useful information. There's a general guidance to start with more commonly known information, and move to more obscure things on further successful check. There is not a defined universal list saying "this is the information you give for any creature."

Yeah, just use the difficulty modifiers for Hard [+2], Very Hard [+5] and Incredibly Hard [+10].
