Do you mean out of the 3 current 2E APs? Or all paizo APs? If you are looking to reskin and AP or module(s) anyone offering advice would need to know what kind of AP you wish to run
There are very different mixes and also settings. What kind of story do you want told?
Might be good to position this in the AP forum unless you are specifically interested in 2E content
You mention 1E Pathfinder and 5E in your post but have posted in 2E
Worth noting that there is a discord out there where people are converting 1E APs to 2E which opens up more options even if less formal
For 2E (from what I have read)
- Age of Ashes has teething problems as it was written when the rules were still in development
- Extinction Curse : difficult to see how easily this can be reskinned as it seems very heavily thematic . Unsure if the circus can be removed
- Edgewatch: only just released. Lots of deescalation focus so not your “standard” at all

I think the question was what AP has good, balanced fights they can just put into their game.
I think PF2 already fixed this problem though by making a very balanced encounter builder. I haven't played any, but some AP's might give good ideas for mixing in traps, terrain and other things to spice up combat though.
Carrion Crown has some really cool set pieces. Haven't tried translating it yet but it seems doable.
