I started a new experimental campaign where the PCs all started at level 0 and during the first few sessions I marked down when they did something that aligned with one class or another. Then, when they finally reach level 1 I'm assigning them their classes.
Everyone agreed that it's an interesting idea and they'd love to try it out, and if it doesn't work, well, we can figure something out later.
The only PROBLEM is I put down SWASHBUCKLER, WITCH, INVESTIGATOR, and ORACLE as options for them to become aligned with, figuring the first few adventures would take them past July.
Now guess which party blitzed through my prepared material with astounding luck? and guess which party has three people aligned with WITCH, INVESTIGATOR, and ORACLE??

It sounds like a great opportunity for you to run a 'Slice-of-life" game where the PCs are given their chance to take it easy, blow off some steam, perform whatever training they think is most appropriate for their eventual class such as joining a militta, church, or underground fighting ring to help set the tone and establish in-game contacts that relate to their class.
Give them the gold they are due for a level 1 character, a few weeks to train, shop, take on fetch quests and gather information on the area they are in to set the tone for the adventure you're planning out and keep the session devoted to mostly RP, Skill challenges, investigation, and teaching them whatever background lore the PCs should have before the story kicks-in properly. The shouldn't need to have the full text of the rules in order to do this kind of stuff, for example if you have a Witch PC on the up it would be a great chance to have them meet their Familiar and connect with a mysterious Patron.
At this point you should only need one more week and you can get them added as fully fleshed out 1st level PCs so unless you meet more than once a week it shouldn't be too big of a deal.
