Say I am a Samsaran with Mystic Past Life. Let’s say a past life I was a Sorcerer with the Elemental (Water) Bloodline. This means that the bonus spells Burning Hands and Scorching Ray lose the fire subtype and gain the cold subtype, as well as dealing cold damage instead of fire damage. Could I choose these cold variants of BH and SR for my character, who would be a Witch?
I’m specifically asking because I’m building a Winter Witch, which wouldn’t be allowed to learn fire spells or cast them, but this would be a workaround. Normally, Scorching Ray wouldn’t matter, but I’d take my first level as Elemental (Water) Sorcerer, while learning Burning Hands, so I technically don’t learn a fire spell as a Winter Witch, since I wasn’t a WW when I learned it, and use the Arcana to change it to a cold spell so I can still cast it, but I realised I could have Magic Missile on the Witch List as a Samsaran, which means with the hex Frozen Caress, I can make it a Cold Spell, and thus free entangle on up to 5 targets when I use Rime Spell Metamagic feat on it, and I wanted to see if I could still get my Cold Burning Hands or not.

A water elemental sorcorer does not know a "cold" hands spell, they know burning hands and have the option when casting it to convert it to a cold spell. So you do not have the option to add "cold" hands through mystic past life, as that spell is not on any spell list.
Look again. I’m talking about the Bonus Spells.
*These spells always deal a type of damage determined by your element. In addition, the subtype of these spells changes to match the energy type of your element.

Okay, so these bonus spells are arcane spells (check), have the descriptor you want (check), looks good so far.
This is somewhat murky to me, but I can see the arguement that "bonus spells" is a class feature that is modifying the spell list and that only unmodified spell lists are valid for Mystic Past Life. Not sure how to resolve that arguement or how I feel about it though.
