So yeah, looking for some archetypes (or variant rules) which offer a non-instant healing option. I seem to recall there was an Alchemist surgeon type of option for this sorta thing, or maybe a Druid herbalist?

The Chirurgeon allows an alchemist to use his healing extracts on others even without the infusion discovery. That does not fit what you are looking for. Basically it allows the alchemist to be able to create potion of healing out of his extracts. That is still instant healing.
