What is the APL for a single level 5 character? Me and my friends are just getting into the game and I wanted to run a solo session for each of them to learn the rules. Also, is there any particular guidelines I should follow when making a solo encounter (number of enemies or size of battlefield or anything like that?

If four 5th level PCs fought four CR5 enemies that would be beyond an epic level encounter.
So, A CR 5 enemy would be roughly the same vs a lvl 5 PC.
So, technically somewhere around 1 or 2, but that's an iffy comparison that would be best to test a little.
Why not have them learn the rules as a group though?

We have a lot of trouble getting together and we still haven't pinned down a time to play yet and when we do I want to be able to get going right away.

The main issue with a single character is that you can very easily kill him on a single failed die roll. Something as stupid as a failed Will save on a Hold Person, or 2 criticals in a row, and it's over.
For me, you can put enemies up to CR 4 against him (well, as you are learning, I would still stay closer to CR 2 or 3), but I would be very careful about the enemies I put him against. It also depends on his class. A Soldier or Solarian will have no trouble against a CR 4 enemy, when a Mystic may be in a very tough situations.

My rule of thumb is, if you only have two PCs, treat every encounter as +2 CR higher. If you only have one, treat the encounter as +4 higher. That way, a single PC taking on a single NPC of the same level is Beyond Epic, which fits.
So, a single CR 5 opponent is only suitable for a solo hero if they are at least level 6, preferably higher.
