Given the above I'd personally say that treat it what ever way it benefits the creature (wielder) in question ... part of the magic of being Ghost Touch. But that is definitely a 'how I'd do it answer'. Not sure a RAW answer exists.

I think it depends on if the wepon itself is incorporeal or not. If it's an incoporeal weapon with the ghost touch property it should be fine. If it's a normal enchanted weapon then it isn't incorporeal. Look at the spiritualist archetype phantom blade for an example of an incorporeal weapon with the ghost touch property.
