The signature ability of the Eldritch Poisoner Alchemist archetype is a special poison they can create called an Arcanotoxin...but Alchemists don't get the ability to safely handle poisons until 2nd level. Does a 1st level Eldritch Poisoner risk poisoning themself every time they use their signature ability? 'Cause that's kind of a bummer!

Because of this sentence "An arcanotoxin functions only when used by the eldritch poisoner and becomes inert if not used within 1 minute." I would argue that the poison only functions when the eldritch poisoner wishes it to, up until the one minute mark.
You know because "magic" poison. So you wouldn't need the ability to handle poisons in general, because this ones your own special brand.

I would buy that, but I'm not sure how well it will fly in PFS. I guess I'll just have to ask my VC!

I wouldn't follow that reasoning as it implies you can stab people and not activate the poison on the weapon until you stab the person you want.
When you mishap it's basically your finger slipping on the blade and you getting the poison. Which is "using it." Even if, like the above example, it's not the person you really want. You don't get a choice.
