I am 99.9% certain that I understand this system, which to me seems much more streamlined the actual activation system. But, my pbp players insist they have read the rules and are doing things correctly, so now I doubt myself.
Lvl 1 Brawler Activation:
1) Swing fist.
2) Use Intimidate to demoralize
3) Swing fist at -5.
Lvl 1 Kinetic Knight Activation:
1) Move.
2) Kinetic Blade attack.
Lvl 1 Inquisitor Activation:
1) Shoot bow.
2) Cast Acid Splash (ranged touch) at -5.
Lvl 1 Rogue Activation:
1) Move.
2) Move.
I think only the Brawler and Inquisitor made full use of their activations, and the other two left an action on the table. Am I right?

Correct. Moving is a simple action. Using the kinetic blade ability is a non-action, and attacking with it is a simple action. Unless the character stepped before moving (which is its own simple action, used to avoid an attack of opportunity), the kinetic knight and the rogue each had an additional action to expend.
What reason did your players give for their interpretation?

I'd say you are correct. Kinetic Blade takes a lot of reading to figure out that it would boil down to a simple attack, but according to its own wording it activates as a melee attack and activates multiple times if you have multiple melee attacks.
The Unchained Action Economy doesn't sit well with me. But well, its more or less the system PF2 is using.
