Behold, the rare quadruple-post!
If a polymorph spell is cast on a creature that is smaller than Small or larger than Medium, first adjust its ability scores to one of these two sizes using the following table before applying the bonuses granted by the polymorph spell.
Creature's Original Size Str Dex Con Adjusted Size
Fine +6 –6 — Small
Diminutive +6 –4 — Small
Tiny +4 –2 — Small
Large –4 +2 –2 Medium
Huge –8 +4 –4 Medium
Gargantuan –12 +4 –6 Medium
Colossal –16 +4 –8 Medium
If a large character is affected by undead anatomy ii, changing it to a large form, first use the table to adjust the creature's ability scores from large to medium, then apply the adjustments in the spell. The end result in this case is no change to Strength or Dexterity and -2 to Constitution. For undead anatomy iv, the same change would have an end result of +2 to Strength and no change to Dexterity or Constitution.

I would say "it makes you small or medium" per the spell description. But if you cast it on yourself as a medium and then did enlarge person you'd get all the benefits not related to size (or modified for your size, more accurately). So yeh, I'd say they stack for the spell and size you end up being.
In particular, you'd have to be SMALL to get the Size Bonus for being, well, small. The other bonuses are just straight bonuses not associated with size. Zombie STRENGTH and all.
