How do variable skills (and appearances) work with summoned monsters?

Suppose I summon something like an astral deva, which has Craft (any). Is the specific Craft skill determined randomly, or can I choose which one?

And while I'm here I may as well ask the same question, but for physical appearance. Granted, the pretty monsters have change shape anyway, but it's good to know.

For things like Craft, it depends on why you're summoning them. If it's for combat, and you're putting them to work AFTER, random. You're calling a fighter, not specifically an expert jeweler or blacksmith. If you're EXPRESSLY summoning them to craft for you, I would say you should get o pick. Physical appearance is generally assumed to be "average for the race."
