if someone adjacent to me provokes an attack of opportunity, can I cast a touch spell and then touch him with it as part of that AOO?
Or would I already have had to cast the spell and be holding the charge when the AOO presents itself?
I want to be able to trip someone, have improved and greater trip, and then cast a touch spell and deliver it to them using spellstrike.

casting a spell requires a standard action (or swift for a quickened spell), so you can't do it as part of an AoO (which isn't an action).
If you're already holding a charge you are considered armed, so you'd be able to use that for an AoO
Spellstrike allows you to use a weapon attack in place of the free touch attack, so wouldn't help in this case (wouldn't really apply at all)
Spell combat is a different case again, but I still don't think it's possible to cast then trip, then use the held spell. I'm reasonably sure it wouldn't be overpowered, I just don't think the rules support it.

Spellstrike allows you to deliver held charges through your weapon.
A magus with held charges can absolutely make an AoO with their weapon and deliver a held charge if he hits.
He could also opt to deliver a held charge as a touch attack, instead of using his weapon for the AoO.

You can't do this as part of an AoO, but you could do this on a normal round using Spell Combat/Spellstrike.
Spell Combat lets you cast a spell either before or after your other attacks. The sequence would go:
Your Turn Begins
Declare Spell Combat
Make Trip Attempt (-2 for Spell Combat)
Make your iterative attack(s) (-2 for Spell Combat) (If you've got Greater Trip, you at least have a -5 iterative)
Cast Touch Spell
Make the Free Attack w/ Spellstrike (-2 for Spell Combat)

You have to cast the spell beforehand and hold the charge.
As the rules state:
Making an Attack of Opportunity: An attack of opportunity is a single melee attack
An AoO is a melee attack, simple as that.
So, as an AoO you can only perform a melee attack, or an action that can be executed in place of a melee attack (like some combat maneuvers).

I was ignoring the held charge option for that comment, and referring to the trip then cast on AoO. Obviously that wasn't clear.
