Ok my upcoming high level homebrew campaign that I will be DMing, i want my players to eventually fight and defeat the demon princess andirifkhu. I know I could just eyeball it or make it a cinematic, but that's not really my style. I pretty much NEED to stat her.
Problem is, I don't know where to begin.
Actually, that's a lie. Obviously the first step to statting something is getting a concept and a rough idea of the abilities it is going to have. What do I do next? Ability scores? SLAs? Special attacks?
Long story short I need help.

It depends, do you want to make a real demonlord, like in one in the bestiaries, or do you just want to make a custom monster? Because the two are quite different.
By default in PF, demonlords are CR 26 to CR 30 so it depends really what kind of challenge you want to give to your players.
One like in the bestiaries. CR 27 ish, they're gonna be 20/mythic 10. They'll handle it.

Actually they kind of included those mechanics in the game, virtually in every entry of most demigods (Demonlords, Archdevil etc...) they do say near the beginning that players can go on quest to give all kind of negative levels and penalties to all these CR 25-30 beings.
So Kith can indeed fight CR 25-30 with his level 20 party...if he goes on an epic quest for each of them.
This approach somewhat reminds me of Savage Tides and fighting Demogorgon at the end, who would be significantly weakened depending on what quests you managed to do. Vaguely recall, you could even end up fighting demogorgon with less than half of his HP and all kinds of penalties.
I got the Savage Tides wrong.

You could also probably pull off the 'it was just a shadow' cliche. This is a demon lord with illusions, trickery, deception, and theft written all over her deity description.
You could also go with a 'weaker but multiple' kind of fight. This has its advantages- single powerful bosses tend to either steamroll the players or get steamrolled. We all know the problem of high level game balance- you want the creature to survive long enough to be cool, but doing so risks wrecking teh party and TPK.
So maybe make a bunch of illusionary fake demon lords as fodder (as in they are physical and have to be destroyed, but they are made by her power), and go with a weaker overall demon lord (most of her strength would be making herself into a group). Maybe have one real one, but let her use that mesmerist trick that lets her switch places with someone on her side.
That should help shore up the action economy and slow down the rocket like nature of mythic.
