For example, the resonant power of the deep red ioun stone is Improved Unarmed Strike. Does this allow you to take other feats that have IUS as a prerequisite? (With the obvious caveat that if you lost the Feat due to ioun is stolen, antimagic field, etc. the other feats would stop working).
Also, if the answer is yes, such items do serve as prerequisites, is there any functional difference between items that grant a particular Feat (such as the example of the deep red ioun), and other items that have language closer to "the wielder is treated as if they had the X Feat..." I can't think of any examples at the moment but I know I've seen that sort of language with multiple items, suggesting that the item grants you the feat's effects, but not the Feat itself.

Yes. You gain the feat as a bonus feat, just as with racially granted and class granted feats.
There's no distinction of where the feat is coming from, you just "have it".
Obviously if you lose the item, you lose the feat (same as if you retrained your class or somehow changed your race).
My personal favorite is the Opalescent White Pyramid Ioun Stone, which gives you Weapon Focus =).
Same goes for items that increase your ability scores and needing those increased scores as prerequisites.

I forgot about one exception: in PFS (since I noticed you're a member), the Perfectionist's Shavtoosh does not count towards prerequisites.
