I am making a human character from South Western Garund. I'm unsure if the proper ethnicity for the humans there would be Garundi, Mwangi, or something else. Likewise, what language would be spoken there? I'm thinking South of Sargava, North of Droon, along the coast. Unless those two regions touch?

Combination of pathfinderwiki and heart of the jungle. Didn't really tell me about where Droon was relative to other places, but it seemed pretty clear that Garundi/Osiriani was only near Osirian, Rahadoum, Nex, etc..... the rest (particularly on western side, seems to be Mwangi/polyglot other than non-humans and the Chelaxian settlers.

The problem seems to be that you chose to locate off of the Inner Sea map! But you said south of Sargava, which is at the southwestern edge of the Inner Sea map, and the only reference in the Inner Sea World Guide that I could find to what lies south of Sargava says more Mwangi Expanse. So yes, Polyglot. I got the impression that Droon is the cape at the southern tip, but I could be wrong. Again, it's off of the map!

Yes. I wished they'd expand the map (or rather, label the expanded map). In this case I ended up going with Kaz'ulu as being where he was from. I don't know where this is, relative to Droon, though. The best I can tell, Kaz'ulu is on the west coast, south of Sargava by some amount, and that Droon is likely much more south. It works though. Kaz'ulu is territory of the Bekyar tribe of Mwangi, so I went with Mwangi/Polyglot. Had the first session for the character, and the history blended very well with the plot and the languages and skills and equipment chosen were clearly appropriate based on how well it fit the sargava-set module. So all worked out well, I'm happy to say!
