So I did a quick search on True Names and didn't find what I was looking for.
What are ways in which a player character can go about acquiring a true name of a demon?
Specifically, if I have a sorcerer, who in an instance of wishing to gain power, signed a devil bound contract with a demon, if he had the demon's true name, could he get out of such a contract?
How would one go about doing this by the rules?

True name research from ultimate magic is the easiest way to get a truename. Basically just a series of knowledge planes checks.
There is a wizard discovery that gives you a truename
According to book of the dammed II there are books on binding available that have truenames written in them. In this case you have to be careful because many are traps laid by evil outsiders. They give you a name that summons them but doesn't allow you to control them
If you summon an outsider you are by RAW allowed to tortchure or bargin truenames of lesser demons out of them
Fairly certain demons don't due contracts as written. As for getting you out of an evil outsider's contract a truename can't get you out. I recommend getting a "good" lawyer/buying your cleric a headband of int +2 with profession barister, or you need to hunt down the outsider's copy of the contract and destroy it along with yours
That is what is written in Paizo books though I have noticed these matters are often modified by DMs
