How do I determine what my bloody Skelton's HP are? I have used animate dead in a desicrated area so the HD is 8 but I haven't been able to find any reference what the HP should be other that the standard Skeleton templates. Can anyone help me?
Side note: this is the first necromancer cleric I've ever played.

Creatures with PC class levels receive maximum hit points for their first HD, but all other HD rolls are assumed to be average. Fast healing and regeneration values, if any, follow the creature's HD.
They have average HP/HD (4.5hp for d8). Then add in any extra hp for consecrate/charisma etc.

Though it would be only 4 hit points per hit dice, as unless specified otherwise Pathfinder is a game were you round down.
You only round the final result down, not each HD. So it is still 4.5 HP per HD for d8.
For Example: At 1 HD: 4 HP. At 2 HD: 9 HP. At 3 HD: 13 HP. At 4 HD: 18 HP. Etc...

No-one is saying you don't round down, we are saying you round down the total, not each individual dice.
Check out pretty much any bestiary creature to confirm that.
First up, the Achairai - 52-14= 38. 5.5*7 (or (5.5*6)=33 +5 (the 7th HD rounded down) = 38.

For skeletons, as written, you lose all class levels and previous HD, you then gain HD of undead equal to the number of racial HD the creature had (if they had no racial HD then they have 1 undead racial HD).
Skeletons can exist with more HD, but require customization at that point.
Skeletal Champions retain their class levels, and gain 2 racial undead HD on top of what they start with, but they require a higher level spell.
Your best bet with minions of undead is to find big animals with higher HD, since they will yield stronger skeletons than humanoids typically.

If you could point out the rule that that you don't round down in this case I'd much appreciate it, as would my friend currently running Carrion Crown and remaking some of the enemies. :)
Bestiary, Monster Creation rules, Average Die Result table.
*Always round down after multiplying. For example, treat the average of 1d4 as 2, and the average of 2d4 as 5.
And as has been said, every monster entry across the various bestiaries.

Thanks Jeraa, I did not know that was there, that could come in handy.
