Seeking: Only ranged weapons can have the seeking ability.
The weapon veers toward its target, negating any miss chances that would otherwise apply, such as from concealment. The wielder still has to aim the weapon at the right square. Arrows mistakenly shot into an empty space, for example, do not veer and hit invisible enemies, even if they are nearby.
Seeking does not eliminate cover bonuses, only miss chances. Cover is a straight AC bonus to the defender and not a miss chance.

As for selling back the enchantment:
If you haven't played since getting the weapon enchanted, just line it out (or erase it if you used pencil) and correct your coin total.
If you have played since purchasing it; you would need to sell the entire weapon back, and purchase a new one including enchanting it at the usual costs.

I've always wondered if this actually works when applied to a bow. On the tables, this ability doesn't have the footnote indicating that a projectile transfers the effect to its ammunition. It does say that "[t]he weapon veers toward its target" so I guess the bow would veer toward the target if you threw it at someone.

The enchantment you may be looking for is "Veering".
