You're definitely going to need Boon Companion. If you want more than 4 levels of a sneaky class, you could take Inquisitor (Sanctified Slayer) with the Animal Domain, but there's not much multiclass synergy there.
If you're just trying to stack up as many sneak attack dice as possible, take a level of Brawler (Snakebite Striker), a level of Unchained Rogue, and a level of Inner Sea Pirate. This will cost you some BAB though.

Well, Boon Companion gets you 4 levels. I think the most Sneak attack you can get with that is Rogue 3/Brawler (Snakebite Striker) 1. That grants +3d6 Sneak Attack. Add in Accomplished Sneak Attacker and you can manage +4d6 Sneak Attack with no animal companion loss.
Toss on a couple of prestige Classes instead of two of those Rogue levels and you can maybe make 5d6.
The only class I can think of that would just increase the Animal Companion and grant Sneak Attack is an Inquisitor (Sanctified Slayer) with the Chivalry Inquisition, but that only gives you a horse or a few other animal companions unless your GM is generous, and only gives you Sneak Attack after at least 4 levels.
I'd just go with the Rogue 3/Brawler 1 build and grab Sense Vitals and Accomplished Sneak Attacker. That gives you almost as much as a straight Rogue right there when the spell is active.
