When using the Angle Wings feat for the Aasimar does medium armor count as light armor when it is made out of Mithral?

Medium armor made out of mithral counts as light for everything except proficiency, so yes.

I wouldn't go so far as to say "everything" but it does explicitly call out movement, so there should be no issue there.
