I am currently playing in a game with a level 3 air Kineticist who selected electric bolt. I am facing multiple foes who are using resist energy. It seems that I am going to be screwed until level 7 when I can get another attack type. Having no way to get past energy resistance for other than fire is a problem.

A couple of things, just wanted to make sure that you (and your GM) know that "Resist Energy" still requires a type. Ie: Resist Energy - Fire.
Also, it's highly situational. It's a small minority of creatures that have such a resistance, and if you're in a campaign where electric resistance is common, your GM should let you either remake your character, or alter the situation a bit. I use eletric almost exclusively from 7th level onward, and it's rarely resisted so far (and by rarely, I mean I haven't actually seen anything resisting me).
Lastly, if you're stuck in a campaign that is highly resistant to your element, just wait a couple of levels. That resistance of 10 is large when your damage is 1d6+4 or 2d6+6, but soon you'll be pouring out the damage and it will be less of a big deal. :)

If you see an elemental resistance being a problem, take draining infusion and then train it out at level 10. Bonus points: You can retrain that infusion to one from your off element.
Draining infusion does nothing in the current situation, since there is no such thing as electricity subtyped creatures.

Oh jeez, I didn't even notice that. That certainly makes the ability a bit more awkward.
