If you are not a Highlander fan, and you don't know who Methos is I will provide a link here.
Now I wanted to make a character strongly based on this character, a man who was born thousands of years ago (So probably an Elan) and has lived and done many different things. Doesn't like to fight but when needed too can still hold his own.
Methos the character inspiring this guy has boasted that he has been on stage with but Julius Ceasar and the Rolling Stones. He had been there done that with many things. Including being the Horsemen Death of the Four Horsemen (Four Immortals who rode through primitive settlements and tribes starting the legends.)
He is also very book smart, very clever and heavily GRAY, he believes in right and wrong, but sometimes sees doing the wrong thing for the right reason as being worth the goal. For example killing a female immortal MacLeod spared because he knew she would either come back and try to kill MacLeod or Richie again, go on to kill more innocents, etc. So as he put it he was a man born long before the age of chivalry and sees men and women as utterly equal and a women deserving of death as much as a man who had done the same.
I don't WANT to make this a gestalt but I might have too. If I did go Gestalt I think I would use Factotum to represent his having been there and done that mentality, as well as his utter cleverness and insight.
But not sure what martial class to marry him to because he can really be anything. Though I considered Slayer due to it being adaptive and a straight martial.

I always loved Methos.
Investigator would fit the bill. Methos was very intelligent, cunning, and manipulative. He tried to avoid most fights if he could help it.
Investigators by default can use Inspiration to be better at Knowledges and Linguistics free of charge if they're trained in them. They can significantly expand the range of skills they get free dice on with Talents, which lets you boost his manipulation abilities. Studied Combat and Studied Strike would fit with his fighting style. They have a number of abilities that benefit from a high Int. The Hidden Agendas talent definitely seems suitable given how good he was at hiding.
The Breadth of Experience feat gives you +2 to all Knowledge and Profession skills and you can use them untrained, to reflect being 100+.
Odd side-note, Peter Wingfield, who played Methos, apparently isn't doing much acting these days because he went back to med school to become a doctor.

Yeah Methos is awesome. I wish he would have gotten his own spin off series.
Investigator was an idea for me as well. Honestly I had considered a Slayer//Investigator for the Gestalt idea because that shows when he wants to be a brutal son of a b**** he can be. But mostly he relies on skill and cunning.
Sneak attack is so a thing Methos would do.

If I remember correctly, didn't he spend most of his time on holy ground to avoid being called out to duel? Not really much potential for a main character there.
Also of minor note, there's a free Herolab dataset called Immortal that's worth hunting down if you own herolab
Found the link again. Contains both relevant D20/Pathfinder rules, and the Pathfinder plugin for Herolab.

You are mixing him up with Darius, who did that because he was a priest and had taken a vow of nonviolence.

Methos infiltrated the Watchers and used them to keep tabs on other immortals so he could avoid them. He gets dragged out of his comfy retirement when MacLeod and a guy he's chasing show up looking for him.

Empiricist Investigator is perfect for this in just about every way. Probably True Neutral and possessing the student of Philosophy Trait (allowing him to ditch Charisma and still have amazing social skills...two things that make a lot of sense together for the self-effacing but extremely cunning Methos).
Yeah, Methos would Sneak Attack, but Studied Combat/Studied Strike do that well enough all on their own.
Really, no need for gestalt, just go Empiricist Investigator.
