I've never even looked at 3rd party before, but i've been playing for a while now. I'd call myself fairly experienced, certainly the most experienced in my group. The GM recently ruled 3rd party fair game on a case by case basis. But for the most part he's said that really anything goes(he's a very chill GM).
Now since i started playing, i've never even looked at 3rd party stuff, classes, prestige classes, archetypes, nothing. So i don't even know where to start. What are some 3rd party stuff that you have played or seen that could be interesting? I've played, or at the very least made, a PC for every class, and stylistically speaking i usually prefer spellcasters (anvil/arm types. never really liked blasters. Never liked martial classes).

Alluria Publishing's amazing Cerulean Seas aquatic campaign setting was the book that first helped me shake off the stigma against 3pp materials I kind of developed during the 3.5 days, and is still a favorite to this day.
Dreamscarred Press' amazingly well executed port of the 3.5 psionics system, along with their awesome original classes and amazing updates of prior materials got me excited about 3pp materials in a pretty serious way, and in no small part led to me becoming a member of the 3pp community as a designer, writing DSP's Akashic Mysteries line, along with additional materials for them and other incredible companies like Rogue Genius Games, Amora Games, and Drop Dead Studios.
If you like casters, Drop Dead Studios "Spheres of Power" introduces an alternative to Vancian (slot-based) style casting in a balanced system that helps raise the floor for spellcasters while bringing the ceiling more in line with the other classes in the game. There's also a variety of great new classes built to showcase the system that allow you to create a faithful and competent execution of almost any concept you can imagine.
Amora Games' "Liber Influxus Communis: The Book of Collective Influence" has 14 new classes created by some of the best 3pp designers in the business, and gives you a great selection of options that aren't as well supported by the Paizo product line. This is a great place to start your 3pp collection.
If you prefer something that's a little whacky and off the wall, check out just about anything from Little Red Goblin Games. Their Runesmith class and their "King of the Ring" product are some of my favorites; the Runesmith is kind of like a cleric who carves his spells into his armor and weapons at the start of the day and activates them reactively, and "King of the Ring" features a Wrestler base class that lets you play a WWE superstar, and a sumo wrestler monk archetype, as well as featuring a bunch of feats and magic items that support the whole wrestling theme.
Rogue Genius Games has a lot of cool materials that impact the Paizo core classes in interesting ways; my favorites are their Talented class line that lets you exercise an unrivaled degree of customization within familiar class chassis, and "The Genius Guide to Bravery Feats" a collection of feats designed to broaden the Fighter's versatility and functionality (which I wrote).

There's a lot of smattering of 3pp material that I tend to bring up in different threads, so Im not gonna list them all. But, I will agree that Dreamscarred Press' Psionic classes are a lot of fun. I can't remember at the moment if it was Fat Goblin Games or Little Red Goblin Games (Im thinking the latter) that made a class called the Pyromancer that was a lot of fun to play with as well.
