It doesn't interact with thrown weapons or projectile weapons at all, well I guess it does if you are stabbing someone with an arrow.
A thrown weapon/projectile is neither an unarmed strike or held in those hands.
Once per day as a swift action, a suli can shroud her arms in acid, cold, electricity, or fire. This lasts for one round per level, and can be dismissed as a free action. Unarmed strikes with her arms or hands (or attacks with weapons held in those hands) deal +1d6 points of damage of the appropriate energy type.

I agree with dragonhunterq that it does not count, LoneKnave. A thrown weapon is held in your hand right before the attack, but not at the moment the enemy is struck. The elemental energy is around your arms and it seems to stay there or at least in very close proximity. If we read it your way, literally every weapon that wasn't produced in mid-air by a spell would be affected, even bows and guns. That does not seem to be the intent at all.

It seems to be the intent to me, just poorly communicated.
PS.: You are also attacking with the bow not the arrow actually. That's why bows have a damage value and not arrows. So you do hold the weapon you are attacking with in your hands.
If you want precedent, these gloves work on ranged/thrown weapons, as does having flaming on your bow transfer to your arrows.

Hmm, that's different than my mental picture of the ability, but I can see where you're coming from. I'm not opposed to the idea, but at that point, the clarifying text seems like it should be reworded. It would be nice if there were an official FAQ on it, but all I found was a post from Michael Brock.
Regardless of intent, I suppose it shrouding the arms and specifically working on unarmed strikes does not preclude it also working on ranged or thrown, so I'd allow a player to use it that way.
