Headband of Vast Intelligence-After being worn for 24 hours, the headband grants a number of skill ranks in those skills equal to the wearer's total Hit Dice. ..So if i choose Linguists. That means i get a extra language per level right?

Say for example i am 5th level and i already have 5 points in Linguistics. I then don the headband. Do i now have 10 ranks in linguistics? Or am i capped at 5 because of level?

And if there is any documentation that would shed light on this issue could i please be pointed to it?

The first place to look for documentation is always the rest of the text of the thing you're asking about:

Headband of Vast Intelligence, literally the very next sentence after you stopped reading, wrote:

These ranks do not stack with the ranks a creature already possesses.

So if you're 5th level and already have 5 ranks in Linguistics, an INT headband keyed to Linguistics will not give you any skill ranks at all.

No need to feel sheepish. It's easy to overlook or forget item, feat, et al, descriptions.

It would grant you one language, though. Not because of it having ranks in linguistics, but because of it having extra int. The extra int is associated with a language and you'd still get that language.
